Bratwurst Subs with Banana Peppers
best music stream of the year… got me hungry! bratwurst it is
Late night, after a stream, and this is what gets made. Two sausages, two rolls, cheese, and a pile of banana peppers that is frankly out of proportion.
The peppers go on last and there should be too many. Everything under them is soft, hot and rich — sausage, melted cheese, ketchup — and the only thing standing against all of it is a cold wet pickled pepper. Half as many and the sandwich is just heavy.
White cheese, melted over the sausage in the roll under a broiler, not laid on cold. Thirty seconds and it drapes.

What you need
The subs
- 2 bratwurst, cooked or smoked
- 2 soft sub rolls
- 4 slices provolone or white American cheese
- 1 tbsp butter, for the rolls
- Ketchup
- A very large pile of pickled banana pepper rings, drained
And
- Coarse mustard, on the side
- Sliced raw onion, if you want it
How it goes
1 — Split the rolls most of the way, not all the way
A hinge along one side. Cut clean through and the whole thing comes apart in your hands halfway through.
2 — Butter the inside and toast it under the broiler
Open, butter on the cut faces, ninety seconds until golden. A toasted interior is waterproofing — it is what stops the ketchup and the pepper brine turning the roll to paste.
3 — Warm the sausages in a pan until the skin tightens
Four or five minutes over medium, turned, until hot through and blistered again. Split them lengthways first if you want more surface in the roll.
4 — Sausage in, cheese over, back under the broiler
Sausage into the toasted roll, cheese laid over the top of it, ninety seconds until it slumps and drapes down the sides. Melting it in the roll is what glues the sandwich together.
5 — Drain the banana peppers properly
In a sieve, pressed. Brine straight out of the jar will flood the bread in about a minute.
pro tip — If you have time, spread them on a paper towel for five minutes. It is the difference between a sandwich and a wet one.
6 — Ketchup in a line, then the peppers on top
Ketchup over the cheese in a stripe, then the peppers heaped on. Not stirred in, not underneath — on top, where you can see them and where they stay cold.
7 — Mustard on the side, not in the roll
In a bowl. Everyone takes a different amount and it is better dipped than built in.
Best music stream of the year. Got me hungry. Bratwurst it is. LFG.
