Fully developed bark on pork butt at six hours
A pork butt filling the whole frame at six hours, the bark now almost black and crazed all over, with molten fat and dark peppercorns collecting in the cracks and running down toward the grate. Nothing else is in focus; the picture is entirely crust.
So true… in a different note…. 6 hours in the bark is fully developed
